Grillo
Simphona is a wonderful and different example of Grillo. Aged on skins in Chestnut barrels for seven months its pallet is deep and ripe with herbaceous high tones. It is made from 100% Grillo from the Vineyards in Pietra Rinosa. This clay based soil and proximity to the ocean gives the Grillo a distinct salty finish.
