Destemmed Shiraz, fermented on skins for 3 weeks, aged in neutral 500L oak puncheons. A concentrated and deeply coloured wine that balances herbaceous, savoury notes of olive, eucalyptus and cola with the rich, blackcurrant-like fruit of this dry sunny region. Juicy but structured, very Australian but also nods toward its French heritage. Bottled with 30mg/l SO2
