    Pinot Noir

    The Pinot Noir is off the organically run Boxer's vineyard on the youngest volcanic soils in the country over heavy limestone. Andrew spray's his own fermented sea weed (sourced locally from our nearby beach) and worm castings via the lunar calendar. A blend of D5V12 and MV6, this wine gets some carbonic treatment, some whole bunch and majority de-stemmed parcels all for around a week. It is then pressed off and fermented dry in stainless before being racked to old puncheons of french oak. A bright, clean and delicious example from Andrew.
