Aligoté
100% Aligote. The grapes come from the En Perthuis vineyard (planted 1950), which is located about 4-5 km west of Beaune on pure limestone soils. The Aligote is pressed directly after the grapes are picked, with an old horizontal wooden press. Elevage is about 16 months, where there is ongoing tasting to follow the development. When they assess that the wine is ready, it is collected in a steel tank for about 2 months to settle post racking.
