    The grapes come from 2 plots in Mandelot (planted 1960), which is located about 4-5km west of Beaune on clay limestone. All the grapes for Hautes Côtes de Beaune are de-stemmed and then put in a tank. During the 21-day fermentation, the wine is worked with gentle pumpovers and plunging to bring out colour, taste and tannins. The wine is then transferred to used casks. They continuously taste the wine to evaluate, and it is about 14-16 months on lees. The wine is then blended in a steel tank for about 2 months to settle post racking.
